Ingredients

  • 1 x egg, beaten
  • 8 x saltine crackers saturated with about 1/3 c. 1 percent lowfat milk, or possibly 1 slice torn bread saturated with lowfat milk
  • 1 tsp salt
  • 1/2 tsp pepper Dry sage Minced celery (maybe 1/3 c.) Minced onion (maybe 1/3 c.)
  • 2 Tbsp. ketchup
  • 1 tsp Worcestershire sauce
  • 1 lb grnd beef (or possibly a mix of grnd meats) Preheat oven to 350 degrees.

Directions

  1. In a large bowl, mix egg, saltines saturated with lowfat milk, salt, pepper, sage, celery, onions, ketchup and Worcestershire sauce. Work in grnd beef with fingers. Do not squish the meat too much or possibly it'll be tough.
  2. Put in a glass loaf pan, pushing the edges lower, and creating a crown. Bake 1 hour to 1 hour and 15 min. Meat thermometer should read 160 degrees in the center.
  3. Drain off fat, holding meatloaf in pan with a spatula, so it doesn't fall in the sink. Let set for 5 - 10 min before slicing.
