Directions

  1. 1. Heat oil, onion, garlic, and carrot in Dutch oven or possibly large, heavy pan. Saute/fry till onion begins to soften, then add in tofu and saute/fry several min.
  2. 2. Add in beans, tomatoes, tomato sauce and corn. Mix well. Stir in spices. Cover and simmer over low heat till flavors have combined, 45 min to 1 hour.
