Meat Stuffed Green Peppers

Ingredients

  • 6 lg. green peppers
  • 1/4 c. extra virgin olive oil
  • 1/2 c. minced onions
  • 3/4 pound grnd beef, or possibly pork or possibly combination
  • 3/4 c. grated Parmesan cheese
  • 2 c. cooked rice
  • 3 tbsp. minced parsley
  • Salt & pepper to taste
  • 3/4 c. tomato juice or possibly stock

Directions

  1. Preheat oven to 350 degrees. Trim the stem ends from the peppers and remove the seeds and pith. In a large skillet heat the oil. Add in the onion and saute/fry till the onion is transparent. Add in the meat and stir till no longer red. Stir in remaining ingredients except the tomato juice and let cold slightly. Stuff the peppers with mix. Place the peppers in a greased baking dish and pour the tomato juice around them. Bake till the peppers are tender, 30-40 min. Baste occasionally with the pan liquid, adding more liquid to the pan as necessary. 6 servings.
