  • 10 sprigs fresh thyme
  • 2 tbsp brown sugar

  • 10 strips of orange confit
  • 2 tbsp orange confit oil

  • 5 large oranges
  • 2 bay leaves
  • 1/2 tsp black peppercorns
  • 2 cups plus 2 tsp best olive oil
  • 4 cups boiling water
