Ingredients
- 1 can (15 ounce) corned beef hash
- 6 x Large eggs
- 1 box corn bread/muffin mix Salt and pepper, to taste
Directions
- Grease a 12-c. muffin pan. Divide hash into six of the c.; press into the bottom and up the sides to create a shell. Break an egg into each shell; season with salt and pepper. Mix muffins according to package directions.
- Spoon batter into the other six c.. Bake at 400 for 15-20 min or possibly till muffins are golden and Large eggs are cooked to desired doneness.
