McNamara's Brown Irish Soda Bread

This is a healthy brown version with no fruit or caraway seeds added. I have taken the liberty to include ground flaxseed and substitute honey or agave nectar for the sugar. I think this is my favorite version of this traditional St. Patrick's Day staple.

Ingredients

  • 2 1/2c whole wheat flour
  • 1/2c all purpose flour
  • 1/2c Irish Steel Cut Oats
  • 1 T ground flaxseed
  • 2T brown sugar (honey or Agave nectar if fine too)
  • 1t baking soda
  • 1t baking powder
  • 1/2t kosher salt
  • 2c reduced fat buttermilk
  • 1 egg, beaten

Directions

  1. Preheat oven to 325F
  2. Grease a large loaf pan, line with parchment paper, grease paper.
  3. Combine dry ingredients.
  4. Add buttermilk/egg mixture, stir until moistened completely.
  5. Allow to rest 3-4 minutes to activate baking soda. Dough will be very wet and sticky.
  6. Spoon into prepared loaf pan, smooth out to fill corners.
  7. Bake at 325F for an hour and 10 minutes.
  8. Loaf should make a nice hollow thud when tapped on bottom. Cool on a rack before slicing.
