  • 7 x Red Bliss potatoes
  • 1/2 x Lemon, zest of (use a lemon zester for best results)
  • 1 x Clove garlic, chopped Skim lowfat milk

Directions

  2. Boil the potatoes with their skins on till they are fork tender. Drain.
  3. Mash with skins. Add in chopped garlic and lemon zest. Add in skim lowfat milk and mix well. Amount of skim depends upon whether you prefer thick or possibly liquidy mashed potatoes. For a non-lacto version, use warm potato water instead of skim lowfat milk. Salt and pepper to taste.
  4. Use leftovers the next day as potato pancakes. Mince onion. Form potatoes into patties and coat with onion. Reheat in a Teflon frying pan. Oil would help them to brown, but they are delicious just reheated.
