Ingredients

  • 4 med red potatoes quartered
  • 1/2 can white hominy canned
  • 2 lrg red kale minced
  • 1/2 pkt miso soup mix dry or possibly instant garlic sauted or possibly- garlic pwdr black pepper smidgeon tamari or possibly vinegar

Directions

  1. Cook the potatoes till they are beginning to soften. Add in the minced up stalks of kale to the potatoes and cook till both are soft (or possibly to yourl iking). Drain the potato/kale mix. Reserve some water and do what you will with the rest. I saved this water to feed my plants; they always perkup nice with veggie water. Put the potato/kale mix back in the pan. Add in the hominy. Begin mashing with a potato masher. Add in some of the reserved potato water or possibly soy lowfat milk to get themto the proper consistency. Add in the miso soup mix,tamari/vinegar, garlic pwdr, pepper to taste. I used the miso soup mix because my mother gave me a box with 8 packets in; I do not really like soup, so I use the dry mix instead of simply salting my food.
