Ingredients

  • 3 cups mashed potatoes
  • 1/4 to 1/2 cup grated Parmesan cheese
  • 2 medium scallions (green onions), thinly sliced
  • 2 medium garlic cloves, minced
  • 1 large egg, lightly beaten
  • 1/3 cup all-purpose flour
  • 2 Tbsp butter
  • Kosher salt
  • Drop 3 to 4 (1/3-cup) large spoonfuls of the potato mixture into the pan and spread each into a 3-inch patty
