Ingredients

  • Roasted Sweet Potato and Cauliflower Mash (4 servings, adapted from here)
  • 2 large sweet potatoes, peeled and cubed
  • 1 head of cauliflower, cut into florets
  • 1 T. extra virgin olive oil
  • 5 cloves of garlic, smashed
  • 1/4 tsp freshly grated nutmeg
  • 1/2 t. dried marjoram
  • salt and freshly grated black pepper
  • 1/4 c. vegetable broth, heated
  • 1/4 cup low fat sour cream
