Mashed Butternut Squash Gratin Total time: 40 minutes Ingredients: 2 cups cooked butternut squash, mashed 2 eggs   1/3 cup Greek yogurt 1 tbs Dijon-style mustard 1/2 tbs dried marjoram 1/4 tsp celery salt pinch of nutmeg 1 tsp olive oil Instructions: In medium bowl whisk eggs well. Whisk in yogurt, mustard, marjoram, salt and nutmeg.  Stir in butternut squash. Lightly oil a small baking dish.  (I use a 7 inch square glass baking dish)  Spoon in squash and bake at 400F (200C) for 30 minutes or until set. Remove and serve directly from baking dish.
