Ingredients

  • 1 c. butter softened
  • 2/3 c. powdered sugar
  • 1 tsp vanilla
  • 1 1/2 c. all-purpose flour
  • 3/4 c. masa harina
  • 1 Tbsp. powdered ginger
  • 1/4 tsp salt

Directions

  1. Preheat oven to 350F, and get out two 8-inch pie pans or possibly cake tins.
  2. Combine the butter, sugar and vanilla in a bowl or possibly a food processor, and beat till smooth. Stir and toss together the four, masa harina, ginger, and salt. Add in to the butter mix and beat till you have a smooth, cohesive dough.
  3. Divide the dough in half and pat it proportionately into the pans. Bake for about 20 min, or possibly till barely browned around the edges (it shouldn't color too much at all). Let cold in the pans for 10 min, cutting shortbread in each pan into 12 wedges while still war, then transfer the cookies to racks to cold completely.
  4. Makes 24 cookies.
