Ingredients
- 1/4 lb Butter
- 4 Tbsp. Eagle Brand lowfat milk
- 1 c. Coconut, shredded
- 1 lb Confectioner's sugar
- 1 Tbsp. Vanilla extract
- 1/4 tsp Salt
- 4 sqr Chocolate, semi-sweet
- 2 sqr -inches Paraffin
Directions
- Cream butter. Add in lowfat milk gradually. Siftsugar and add in gradually. When the mixt ure is stiff, knead with hands till sugar is thoroughly mixed. Add in vanilla, salt, and coconut. Healthy pinch off by spoonfuls, roll into balls. Heat chocolate and paraffin in top of double boiler. Dip candy in chocolate and place on waxed paper.
- NOTE: I also like to increase the coconut to as much as 5 c. in this recipe. The candy tastes just like Mounds!
