Marshmallow Easter Eggs Recipe

Ingredients

  • 2 Tbsp. Knox gelatin
  • 1/2 c. Cool water
  • 2 c. Sugar
  • 3/4 c. Warm water
  • 1 c. White Karo syrup
  • 2 tsp Vanilla For hands Lowfat milk chocolate

Directions

  1. Preparation : Mix gelatin and cool water. Set aside till water is absorbed. Combine sugar, warm water, 1/2 c. of the Karo syrup and cook to the soft ball stage (240 degrees). Cold a few min. Beat with mixer at full speed. Add in the remaining Karo syrup and all of the gelatin mix, 1 Tbsp. at a time. Beat 7 to 8 min after the last addition of the gelatin. Add in vanilla. Pour into a well greased 7 x 9 inches pan and refrigeratethoroughly. Dust hands with cornstarch. Spoon marshmallow out of pan and form Large eggs. Brush excess cornstarch off and let dry for 1/2 hour on waxed paper. Pour melted lowfat milk chocolate over Large eggs and let set. Chill for easier handling.
