Marlin With Rosemary Aioli Recipe

Ingredients

  • 3/4 c. Mayonnaise
  • 1 Tbsp. Lemon juice
  • 3 x Garlic cloves chopped or possibly pressed
  • 1 tsp Chopped fresh rosemary (or possibly 1/2 tspn crumbled dry rosemary)
  • 1 1/2 lb Marlin steaks - (4 ea, cut 1" thick)
  • 2 tsp Extra virgin olive oil Salt to taste

Directions

  1. In a small bowl, combine mayonnaise, lemon juice, garlic, and rosemary. Cover and chill aioli till ready to use or possibly for up to 2 days.
  2. Rinse fish and pat dry. Brush all over with oil. Arrange fish on cooking grate. Place lid on grill. Cook, turning once with a wide spatula halfway through cooking time, till fish is opaque but still moist in center (about 10 min; cut to test). Using spatula, transfer fish to a platter or possibly individual plates. Serve with aioli. Season to taste with salt.
  3. This recipe yields 4 servings.
  4. Comments: Prepare this garlic mayonnaise a day or possibly two in advance so the flavors have time to blend. It is equally good with such side dishes as sliced tomatoes and cooked small potatoes or possibly green beans.
