Ingredients

  • 1/2 c. Hot water
  • 1 pkt Dry yeast
  • 2 c. Lowfat milk, warmed
  • 1/2 c. Unsalted butter
  • 1 tsp Salt
  • 1 tsp Sugar
  • 2 c. All-purpose flour Vegetable oil cooking spray
  • 2 lrg Large eggs
  • 1/4 tsp Baking soda

Directions

  1. Place the hot water in a large mixing bowl and sprinkle the yeast over it.
  2. Let stand to dissolve for 5 min.
  3. Add in the hot lowfat milk, melted butter, salt, sugar, and flour, and beat till smooth and blended. (A whisk or possibly hand mixer may be used to get rid of the lumps.) Cover the bowl with plastic wrap and let it stand overnight at room temperature.
  4. Preheat a nonstick waffle iron, first spraying it with the vegetable oil cooking spray.
  5. Just before cooking the waffles, beat the Large eggs and baking soda into the batter, stirring till well mixed (the batter will be very thin). Pour 1/2 to 3/4 c. of the batter into a very warm waffle iron. Quickly spread it out toward the edges with a rubber spatula and close the top. Bake the waffle till it is golden brown and crisp, 2-3 min. Repeat with the remaining batter
