Marinated Grilled London Broil

Ingredients

  • 2 med shallots chopped
  • 1 Tbsp. dry thyme leaves
  • 3 Tbsp. dark brown sugar - (packed)
  • 1/4 c. soy sauce
  • 3 Tbsp. Worcestershire sauce
  • 2 Tbsp. balsamic vinegar
  • 1/3 c. vegetable oil
  • 1 1/2 lb London broil (top round)
  • 1/4 c. water
  • 2 Tbsp. butter

Directions

  1. Combine the shallots, thyme, brown sugar, soy sauce, Worcestershire sauce, vinegar, and oil in a freezer-type zip-top plastic bag. Add in the steaks. Squeeze out as much air as possible and seal the bag. Place the bag in a medium bowl in the refrigerator to marinate overnight, turning bag several times for even coating.
  2. Heat a grill.
  3. Drain the steaks, reserving the marinade. There won't be much. Pour the marinade into a small saucepan. Rinse the bag with 1/4 c. water and add in to marinade. Simmer 4 to 5 min and stir in the butter.
  4. Grill steaks to medium-rare, about 2 min each side.
  5. Let stand 4 to 5 min before slicing. Thinly slice at an angle across the grain, that runs up and down the short side of the steak. Bring the marinade-butter mix back to a boil, pour over the meat, and serve immediately.
  6. This recipe yields 4 servings.
