Margarita Brined Chicken Thighs Recipe

Ingredients

  • 2 cups water, divided
  • 1/4 cup kosher salt
  • 2 tablespoons brown sugar
  • 1/2 cup limeade (or tequila…totally not the same thing, I know)
  • 3 tablespoons orange zest
  • 1/2 cup orange juice
  • 3 tablespoons lime zest
  • 1 tablespoon whole peppercorns
  • 1 1/2 pounds boneless skinless chicken thighs, trimmed of excess fat*
  • Extra-virgin olive oil
  • Freshly ground black pepper
  • 3 limes, halved
  • 1-2 lemons, halved
  • 1 orange, halved
  • You can also use 1 1/2-2 pounds bone-in chicken breasts (with skin), peeled and deveined shrimp, or pork loin or tenderloin
