Ingredients

  • 4 x boneless skinless chicken breast halves
  • 1/2 c. Atkins Sugar Free Pancake Syrup
  • 2 tsp Dijon mustard
  • 1 tsp dry herbes de Provence (or possibly dry tarragon)

Directions

  1. Cut each chicken breast half lengthwise into six strips.
  2. Combine syrup, mustard and herbes de Provence in a resealable plastic bag. Add in chicken. Chill 4 hrs up to overnight.
  3. When ready to serve, heat oven to 350 degrees. Thread strips on metal or possibly soaked bamboo skewers. Arrange on a broiler pan. Bake 20 min or possibly till cooked through.
  4. This recipe yields 24 servings.
  5. Description: "These delicious snacks keep well in the fridge for up to a week. For a tasty lunch, serve five or possibly six over dressed salad greens."
