Mansikkatortu Strawberry Torte (Finland) Recipe

Ingredients

  • 5 x Large eggs, separated
  • 3/4 c. Sugar
  • 3 c. Crushed fresh or possibly frzn strawberries
  • 1 c. Cookie or possibly cake crumbs
  • 1 tsp Almond extract Whipped cream

Directions

  1. Beat egg yolks till light; add in sugar and beat till mix is stiff and lemon colored. Add in liquid removed strawberries; add in crumbs and almond extract.
  2. Beat egg whites till stiff but not dry; fold into strawberry mix. Pour mix into buttered 8x12-inch baking dish. Bake at 350 degrees for 35 min. Serve with whipped cream.
  3. Yield: 8 servings
