Manhattan Style Clam Chowder With Chilies

Ingredients

  • 4 x bacon slices minced
  • 1 x onion minced
  • 2 x celery stalks minced
  • 3 x garlic cloves chopped
  • 1 x bay leaf
  • 1/2 tsp dry thyme crumbled
  • 2 can stewed tomatoes (14- to 16-oz)
  • 1 bot clam juice (8-oz)
  • 1 x tomato sauce (8-oz)
  • 1 lrg russet potato peeled, diced
  • 1 can diced green chilies (4-oz)
  • 2 can minced clams (6 1/2-oz)

Directions

  1. Fry bacon in heavy large saucepan over medium-high heat till just beginning to brown, about 7 min. Add in onion, celery, garlic, bay leaf and thyme and cook till onion is tender, stirring occasionally, about 8 min. Add in stewed tomatoes with their juices, clam juice, tomato sauce,
  2. potato and chilies. Reduce heat and simmer till potato is very tender, about 40 min. Add in clams with juices and heat through. Season chowder
  3. to taste with salt and pepper. Ladle into bowls and serve.
  4. Serves 6.
