Ingredients

  • 100 gm Desiccated coconut, (4oz)
  • 1 pch Cinnamon
  • 1 x Pod Cardamom
  • 140 ml Lowfat milk, (5fl ounce)
  • 5 tsp Vanilla essence
  • 55 gm Sultanas, (2oz)
  • 4 Tbsp. Dark rum
  • 1 x Mango, cut into thin strips
  • 1 x Apple, cut into thin strips
  • 1 sht filo pastry
  • 1 x Egg, lightly beaten for egg wash
  • 2 Tbsp. Caster sugar
  • 1 Tbsp. Water
  • 2 Tbsp. Whipping cream
  • 55 gm Chilled butter, (2oz)
  • 1 Tbsp. Honey Mango

Directions

  1. Hot the lowfat milk with the cinnamon, cardamom and vanilla. Add in the coconut and simmer till all the liquid has been absorbed. Leave to cold.
  2. Pour the rum over the sultanas and leave for about 1 hour.
  3. Take a sheet of filo pastry, place on a spoonful of the coconut lowfat milk, scatter on a few sultanas, place on a slice of apple and mango. Egg wash the pastry and fold together to create a spring roll.
  4. Place in a warm oven 180 C/350 F/gas mark 4 for about 10 min till golden.
  5. To make the sauce: Boil the sugar and water to create a caramel, add in the cream and slowly whisk in the butter, keep hot. Place the warm fritters on a plate, drizzle with the sauce and decorate with seasonal fruits and berries.
