This is one of my Mom's classic recipes. It is perfect for a large barbeque or pot luck. I talk it to a block party in San Carlos last night and it was GONE in about an hour. Very good flavors!
Ingredients
- Dressing:
- 1/2 tsp salt
- 2 Tbsp sugar
- 2 Tbsp red wine vinegar
- 1/4 cup vegetable oil
- Dash of tabasco or other red pepper sauce
- 1 Tbsp fresh parsley, minced
- Salad:
- 1/2 cup sliced almonds
- 1/4 sugar
- 6 cups romaine lettuce or spinach
- 1 cup chopped celery
- 2 green onions, thinly sliced
- 11 oz can mandarin oranges, drained
Directions
- Place all ingredients of dressing in a jar, shake well, and refrigerate.
- Place almonds and sugar in a skillet over low heat. Stir until sugar is melted and almonds are coated. pour almonds onto a sheet of waxed paper to cool. When cool, break the almonds into small pieces. Note: If done ahead of time, almonds can be stored in an airtight container until you assemble the salad.
- Place romaine, celery, onions, oranges, and almonds in salad bowl. Pour dressing over the top, toss the salad, and serve!
