Mandarin Orange Lettuce Salad

Ingredients

  • 1/4 c. sliced almonds
  • 1 tbsp. + 1 teaspoon granulated sugar
  • 1/4 head iceberg lettuce
  • 1/4 head Romaine lettuce
  • 1 (11 ounce.) can mandarin oranges, liquid removed
  • 1 c. celery, minced
  • 2 green onions, including tops, sliced thin

Directions

  1. Shake all dressing ingredients together in jar; chill, tightly covered.
  2. In skillet, cook almonds and sugar over low heat, stirring constantly till sugar is melted and almonds are coated. Cold and break apart. Store at room temperature till salad is served. Tear iceberg and Romaine lettuce in bite size pcs, making about 4 c.. Place greens in plastic bag; add in celery and onion. If not ready to serve, seal bag and chill. Five min before serving, mix greens well, add in liquid removed oranges. Pour dressing into bag and shake gently till greens and oranges are well coated. Add in almonds and shake again. Yield: 6 servings.
