Ingredients

  • 2 Cornish hens
  • 1 c. Pepperidge Farm stuffing mix
  • 1/2 c. butter, melted
  • 1 egg, beaten
  • 1 can mandarin oranges, liquid removed and diced
  • 2 tbsp. soy sauce
  • 1 clove garlic, crushed

Directions

  1. Mix together stuffing, butter, egg and oranges. Stuff hens. Brush hens with mix of soy sauce and garlic. Wrap in foil and roast in 400 degree oven for 40 min, basting occasionally. (Slow cooker may be used instead of oven roasting. Place juice liquid removed from mandarin oranges in bottom of cooker. After basting with soy sauce, place stuffed hens in cooker vertically. Cook at high for 5 to 6 hrs or possibly till tender.)
