Mama's Puerto Rican Rice And Beans

Ingredients

  • 2 can Kidney beans
  • 1 sm can Tomato sauce
  • 1 env "Sazon" seasoning
  • 1 x branch Cilantro, minced
  • 1 sm Potato
  • 8 x Olives, green
  • 1 sm cube Ham, diced
  • 1 Tbsp. Extra virgin olive oil
  • 1 1/2 tsp Salt
  • 3 c. Rice, cooked

Directions

  1. In saucepan, heat extra virgin olive oil. Add in all seasonings except tomato sauce and beans. Saute/fry for about 3 min. Add in tomato sauce and saute/fry about 1 more minute. Add in undrained beans from can. Add in water to cover, about 1 can. Simmer on medium to low for about 20 min, stirring to keep from burning. Cook till sauce thickens.
  2. Serve over rice.
  3. Sazon is found in the ethnic food section. Any product named "Sofrito" can be substituted.
