Malted Almond Icrcream

It looks and sounds a lot more complicated, but it's actually quite simple to make.You can make this several days in advance-keep covered with foil in freezer until needed.

Ingredients

  • 2 cans thickened cream ( or 600 ml)
  • 1/2 cup maltose
  • 1/3 cup brown sugar
  • 6 eggs,separated
  • 2 tbsp flaked almonds

Directions

  1. Heat cream,maltose and brown sugar in a pan until mixture comes to the boil.
  2. Remove from heat,cool 5 mins,whisk in egg yolks.
  3. Beat egg whites in medium bowl with electric mixer until firm peaks form,fold into egg yolk mixture.
  4. Pour into large loaf tin,cover with foil,freeze several hours or overnight until set.
  5. Toast almonds on oven tray in moderate oven for 5 mins.cool
  6. Serve icecream topped with cream,a little honey and the almonds
