Malaysian Spicy Fried Chicken Wings

A good rub a dub of grounded Asian herbs, chilli paste and double dose of spiciness from chilli powder and red chillies.

Ingredients

  • 3 chicken wings - halve at the joints
  • 1 tbsp chilly powder
  • 1 tsp corn flour
  • 1 tsp rice flour
  • Salt to taste
  • Oil for frying
  • To blend/ground
  • 4 shallots
  • 1 inch fresh turmeric/kunyit (alternatively turmeric powder)
  • 1 lemon grass
  • 2 red chillies

Directions

  1. Marinate wings with all the ingredients except oil.
  2. Gently poke wings all over with a fork for the ingredients to sip inside.
  3. Marinate for at least 4 hours.
  4. (note; will be good to place wings in the fridge to keep fresh)
  5. Bring out and deep fry.
  6. Drain and serve with sour cream/yoghurt (optional) while still piping hot.
