Malawian Spiced Chicken Curry

A good curry is a pretty wondrous thing.

From the shores of Lake Malawi a delectable Chicken Curry

Ingredients

  • 500g chicken pieces skin on
  • 4Tbs vegatable oil
  • 3 Lge onions chopped
  • 5 Tomatoes,peeled and chopped
  • 2 Tbs curry powder
  • 1 fresh green chilli chopped
  • 1 tsp dreid thyme
  • 1 cup water
  • 2 cups chicken stock
  • 1 cup peeled and cubed potatoes
  • Pepper

Directions

  1. Season chicken pieces with salt
  2. heat oil in frying panand fry piecesof chicken until brown then transfer to a lge pot
  3. pour off most of the oil in the pan,leaving +_2 Tbs
  4. Saute Onions till soft
  5. Add tomatoes,curry powder,chilliand thyme
  6. After a few minutes, pour in the waterand stock and bring to the boil
  7. Add the mixture to the chicken in the Lge pot
  8. Simmer covered for 45mins over very low heat
  9. Add potatoes and cook a further 15mins till tender
  10. Season with salt and pepper
