Ingredients

  • 1 c. Sugar
  • 2 x Large eggs
  • 3/4 c. Lowfat milk
  • 3/4 c. Cool mashed potato
  • 3 3/4 c. Flour
  • 1/4 c. Melted shortening
  • 1 tsp Vanilla
  • 4 tsp Baking pwdr
  • 3/4 tsp Ginger

Directions

  1. Mix sugar and Large eggs, add in lowfat milk and potato. Add in shortening and vanilla. Sift dry ingredients, add in and mix well. Refrigerate1 hour before frying. Roll, cut out and fry in deep fat at 375.
