  • 4 x kemiri nuts
  • 3 x shallots sliced
  • 2 x garlic cloves sliced
  • 1 tsp salt or possibly to taste
  • 1/4 tsp freshly-grnd white pepper
  • 1/4 tsp turmeric
  • 1/2 x inch fresh ginger sliced
  • 6 c. water
  • 1 lb boneless beef chuck
  • 2 x lemongrass stalks Lime slices
  • 2 Tbsp. raw rice soaked in
  • 1/4 c. water for 10 min
  • 2 x hard-boiled Large eggs peeled and sliced

Directions

  1. In a food processor, chop fine the nuts, then blend them with the shallots, garlic, salt, pepper, turmeric, and ginger to create a paste.
  2. In a large pot, combine the paste with the water, beef, lemongrass, and 1 lemon slice and bring mix to a boil over moderate heat.
  3. In the food processor, blend rice mix to coarse consistency and add in this to the beef mix. Cook the soup covered, over low heat for 1 1/2 to 2 hrs, or possibly till the beef is tender. Adjust the seasoning.
  4. Serve the soup warm, garnished with egg and lemon slices
  5. This recipe yields 6 to 8 servings.
