Ingredients
- 2 oz rye whiskey
- 1/2 oz sweet vermouth
- 2-3 dashes Angostura bitters
- Maraschino cherries for garnish (I’ve used my own version which are a combination of sour cherries and Luxardo Maraschino Liqueur)
- 3 Tbsp butter
- 12-16 oz sliced mushrooms
- 4 stalks green onion, sliced
- 2-3 cloves garlic
- 4 Tbsp Medium Dry or Dry Sherry
- 6 ounces cream cheese
- 1tsp fresh thyme or rosemary
- Salt and Pepper to taste
- Parsley for garnish

%20but%20I%20was%20not%20interested%20in%20an%20entire%20case.%20Drat!!%20Finally,%20feeling%20a%20bit%20desperate,%20I%20decided%20to%20contact%20my%20favorite%20restaurant%20and%20see%20if%20they%20had%20one%20I%20could%20borrow.%20I%20can%20not%20deny%20that%20once%20I%20get%20it%20in%20my%20head%20that%20I%20want%20something%20done%20a%20certain%20way%20I%20am%20most%20definitely%20a%20woman%20on%20a%20mission!%3C/p%3E%3Cp%3EThe%20Manhattan%20is%20an%20elegant%20cocktail%20with%20a%20rich%20history;%20some%20of%20it%20fabricated%20to%20lend%20more%20glory%20to%20its%20name%20but%20all%20leading%20to%20it%20originating%20in%20Manhattan,%20one%20of%20the%20five%20Burroughs%20of%20New%20York%20City.%20By%20all%20accounts%20it%20originated%20in%20the%20later%20part%20of%20the%2019th%20century%20and%20has%20seen%20a%20resurgence%20often%20attributed%20to%20the%20popularity%20of%20%E2%80%98Mad%20Men%E2%80%98%20%E2%80%93%20a%20television%20show%20that%20chronicles%20the%20lives%20and%20social%20mores%20of%20the%201960%E2%80%B2s%20in%20America.%20I%E2%80%99ll%20be%20honest.%20I%20didn%E2%80%99t%20expect%20to%20be%20a%20fan.%20Let%E2%80%99s%20just%20say%20that%20my%20parents%20both%20enjoyed%20a%20Manhattan.%20They%20were%20a%20part%20of%20that%2060%E2%80%B2s%20generation%20that%20drank%20too%20much%20and%20partied%20too%20hard;%20there%20were%20affairs%20and%20a%20divorce%20and%20in%20a%20real%20soap%20opera%20twist;%20a%20re-marriage.%20By%20them.%20To%20each%20other.%20Watching%20that%20play%20out%20on%20the%20small%20screen%20hit%20a%20bit%20too%20close%20to%20home%20so%20I%20kept%20my%20distance%20from%20the%20show%20for%20the%20first%20couple%20of%20years%20until%20a%20friend%20insisted%20I%20do%20a%20marathon%20with%20her%20and%20doggone%20it;%20I%20was%20hooked.%20Truth%20is%20I%20had%20also%20kept%20my%20distance%20from%20a%20Manhattan%20all%20these%20many%20years%20for%20many%20of%20the%20same%20reasons%20and%20that%20was%20another%20error%20in%20judgement%20on%20my%20part.%3C/p%3E%3Cp%3EThis%20is%20no%20lightweight%20drink.%20Recognizing%20that%20my%20taste%20in%20wine%20has%20segued%20from%20Boone%E2%80%99s%20Farm%20to%20a%20nice%20Cabernet%20over%20the%20years,%20I%E2%80%99m%20quite%20certain%20that%20if%20someone%20had%20introduced%20me%20to%20this%20cocktail%20those%20many%20years%20ago;%20it%20would%20have%20been%20received%20less%20than%20favorably.%20This%20is%20booze,%20pure%20and%20simple.%20Despite%20some%20controversy%20over%20where%20it%20began,%20one%20area%20without%20controversy%20is%20the%20continued%20popularity%20of%20the%20drink.%20It%20is%20still%20considered%20one%20of%20the%20finest%20cocktails%20ever%20conceived%20and%20on%20every%20bar%E2%80%99s%20list%20of%20best%20cocktails.%3C/p%3E%3Cp%3EPurists%20(who%20are%20these%20people%20anyhow?!!)%20presume%20that%20the%20only%20way%20to%20create%20a%20Manhattan%20is%20with%20Rye%20Whiskey,%20Sweet%20Vermouth%20and%20Bitters%20but%20there%20are%20those%20who%20cry%20sacrilege%20if%20not%20using%20Dry%20Vermouth.%20Most%20concede%20that%20Rye%20Whiskey%20is%20the%20liquor%20of%20choice%20and%20I%20love%20Templeton%20Rye%20but%20bartender%20choices%20run%20the%20gamut%20from%20Bourbon%20to%20Rye%20to%20Canadian%20Whiskey.%20For%20me%20it%20has%20to%20be%20Rye%20but%20I%E2%80%99m%20more%20forgiving%20with%20the%20Vermouth%20depending%20on%20tastes,%20personally%20preferring%20Sweet%20Vermouth.%20Bitters%20are%20seeing%20a%20huge%20boon%20in%20popularity%20right%20now%20and%20the%20choices%20are%20endless%20but%20this%20is%20a%20Manhattan%20and%20Angostura%20bitters%20are%20a%20must.%20Sometimes%20something%20is%20so%20good%20that%20you%20simply%20don%E2%80%99t%20need%20to%20mess%20with%20success!%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EPour%20the%20ingredients%20into%20a%20mixing%20glass%20with%20ice%20cubes.%3C/p%3E%3Cp%3EStir%20well.%3C/p%3E%3Cp%3EStrain%20into%20a%20chilled%20cocktail%20glass.%3C/p%3E%3Cp%3EGarnish%20with%20the%20cherries.%3C/p%3E%3Cp%3EMelt%20the%20butter%20in%20a%20skillet%20over%20medium%20heat%3C/p%3E%3Cp%3EAdd%20the%20sliced%20mushrooms%20and%20saut%C3%A9%20for%203-4%20minutes%20until%20softened.%3C/p%3E%3Cp%3EAdd%20the%20green%20onion,%20garlic%20and%20Sherry%20and%20saute%20for%203-4%20more%20minutes%20til%20the%20garlic%20is%20cooked%20but%20not%20browned.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20allow%20to%20cool%20for%205%20minutes.%3C/p%3E%3Cp%3EPut%20herbs,%20cream%20cheese%20and%20mushroom%20mixture%20into%20food%20processor%20and%20pulse%20gently%20until%20mixed%20thoroughly%20but%20not%20completely%20smooth.%3C/p%3E%3Cp%3ESeason%20to%20taste%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EPack%20into%202%20serving%20crocks%20and%20refrigerate%20for%202%20hours%20minimum.%3C/p%3E%3Cp%3ESprinkle%20with%20chopped%20parsley%20and%20service%20with%20crackers%20or%20toast%20points.%20With%20a%20Manhattan!%3C/p%3E%3Cp%3E6.5%3C/p%3E%3Cp%3Ehttp://www.creative-culinary.com/classic-manhatt
