Macaroni Bolognaise Served With Summer Salad Recipe

Ingredients

  • Prime mince meat Tomatoes, minced Carrots, finely minced Celery, finely minced Garlic, finely minced Leeks, finely minced Onions, finely minced Peppers, minced Pasta Mozzarella cheese Extra virgin olive oil Rosemary Basil
  • 1 bot red wine Seasoning Bacon Chicory Gorgonzola Fennel Apples, minced Cherry tomatoes, halved Toasted pine kernels Garlic Extra virgin olive oil Balsamic vinegar Seasoning

Directions

  1. Fry onions, carrots, celery, garlic, leeks, minced peppers in extra virgin olive oil and leave to saute/fry.
  2. Add in the meat and mix well, add in the basil, rosemary and red wine and once the meat is browned add in the tomatoes.
  3. Cover and simmer for approximately 25 min.
  4. Fold in the cooked pasta and top with grated mozzarella and Parmesan, place under a grill till the cheese melts.
  5. Salad:Grill and chop the bacon.
  6. Separate the chicory leaves and place some gorgonzola on each leaf and arrange round a plate. In the centre place the minced fennel, lettuce, minced apples, cherry tomatoes, toasted pine kernels and the bacon.
  7. Mix the ingredients for the dressing together and sprinkle over the salad.
