Ingredients

  • 12 ounce Dry Macaroni or possibly Curly Pasta
  • 1/3 c. Butter, Divided
  • 1 Tbsp. Butter
  • 1/2 c. Minced Red or possibly Green Bell pepper
  • 1/3 c. Flour
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 2 c. Lowfat milk
  • 1 c. Shredded Provolone Cheese
  • 1 c. Shredded Cheddar Cheese
  • 3/4 c. Blue Cheese, Crumbled
  • 2 sm Tomatoes, Sliced
  • 1/4 c. Seasoned Dry Bread Crumbs

Directions

  1. Cook macaroni according to package directions; rinse and drain.
  2. Place 1/3 c. butter in 2 1/2-qt microwave-safe dish. Microwave on HIGH for 1 minute. Add in bell pepper; cook on HIGH about 2 min, or possibly till crisp-tender. Stir in flour and seasonings; mix till smooth. Microwave on HIGH 45-60 seconds, or possibly till mix bubbles.
  3. Gradually stir in lowfat milk. Microwave on HIGH 6 min, or possibly till thickened and bubbly, stirring every 2 min. Sir in cheeses till melted. Sir in cooked macaroni. Arrange tomatoes around outer edge of casserole.
  4. Microwave remaining 1 Tbsp. of butter in microwave-safe measuring c. on HIGH 20 seconds. Stir in bread crumbs till well-combined. Sprinkle bread crumbs over tomatoes and pasta. Microwave on HIGH 5-6 min, or possibly till warm and bubbly, rotating dish after half the cooking time. Serve immediately.
