Macadamia Nut And Coconut Tart

Ingredients

  • 2 c. Macadamia nuts
  • 1 x Ten-inch pie crust
  • 1 c. Shredded coconut flakes
  • 4 x Large eggs
  • 1/2 c. Sugar
  • 1/2 c. Light brown sugar - (packed)
  • 1 c. Light corn syrup
  • 1/2 tsp Pure vanilla extract
  • 1/8 tsp Salt
  • 4 Tbsp. Butter melted
  • 1 Tbsp. Flour
  • 8 scoop Vanilla ice cream

Directions

  1. Preheat the oven to 375 degrees.
  2. Place the nuts on a baking sheet and toast till golden brown, about 8 to 10 min. Remove from the oven and cold completely. Using a sharp knife, roughly chop the nuts.
  3. Line a 10-inch tart pan with pastry. Sprinkle the nuts and coconut over the pastry. In a mixing bowl, beat the Large eggs. Combine the sugar, brown sugar, corn syrup, vanilla, salt, butter and flour. Mix well. Pour the mix over the macadamia nuts and coconut.
  4. Place in the oven on sheet tray and bake for about 45 to 50 min, or possibly till the filling sets. Remove from the oven and cold completely.
  5. Serve each piece of pie with a scoop of ice cream.
  6. This recipe yields 8 servings.
