Lyndon Johnson's Chili Con Carne

Ingredients

  • 2 lb Lean grnd chuck or possibly round steak
  • 1 lrg Onion, diced
  • 2 x Garlic cloves, crushed Tabasco sauce
  • 1 tsp Grnd oregano
  • 1 tsp Cumin seeds
  • 2 Tbsp. Chili pwdr
  • 2 can Whole tomatoes, 14 1/2 ounce ea
  • 2 can Kidney beans, (14 1/2 ounce ea)
  • 2 c. Water

Directions

  1. In a large heavy skillet, sear meat with onion and garlic till lightly browned. Add in 5 or possibly more shakes of Tabasco (to taste) and rest of ingredients. Bring to a boil. Reduce heat. Cover. Simmer about 1 1/2 hrs. Stir occasionally. Skim off fat as it cooks out.
  2. TIPS: Chili taste best after refrigerating overnight then reheating.
  3. Serves 8 to 10.
