  • 2 Large eggs
  • 1/4 c. oil
  • 1 c. lowfat sour cream or possibly yogurt
  • 1 box Jiffy corn muffin mix
  • 1 c. creamed corn

Directions

  1. Blend together by hand, Large eggs, oil and corn muffin mix. Mix in - don't beat. Add in corn. Spray pan. Iron frying pan or possibly cake pan. Bake 375 degrees till golden. Let stand 5 min before cutting.
