Lucky Cheesy Broccoli Soup

We were "lucky" that this soup turned out edible.. Didn't quite have what the recipe called for, so we just got "Lucky it wasn't Yucky"

Goes Well With: crusty french bread, crackers, homemade bread, bread bowls

Ingredients

  • 3-4 heads of Fresh Broccoli or a medium bag of frozen pieces
  • 10 green onions
  • 3 packages of the soup mix from chicken Ramen noodles
  • 1/4 cup margarine
  • salt, pepper, garlic powder to taste
  • 2 teaspoons minced onion flakes
  • 1 squeeze bottle of cheese (your choice of flavor)
  • 2 tbsp of flour for thickening
  • 1/2 cup of whole milk or water

Directions

  1. Put large pot of water on to boil. 2-3 quarts.. just depends on how soupy you want the soup. Put margarine, s[ices, soup mix and flaked onions and give it a stir.
  2. Chop broccoli and green onions (mediun chop)... put into soup pot.
  3. Let this come to a boil until the broccoli is soft... give a stir every so often.
  4. Meanwhile put the cheese into a bowl and mix with a little water or milk for a richer taste. Whisk to together.
  5. Take one cup of the soup broth out and place the flour in it.. stir to completely dissolve NO LUMPS IN broccoli soup
  6. Then you add the thickener and the cheese mixture back to the soup and stir to combine. Serve Hot with french nread or crackers.
