Ingredients

  • 1 1/2 c. All-purpose flour
  • 2 Tbsp. Sugar
  • 2 tsp Baking pwdr
  • 1 tsp Grnd cinnamon
  • 1/2 tsp Salt
  • 1/4 tsp Grnd cloves
  • 2 x Large eggs---separated
  • 1 c. Skim lowfat milk
  • 3 Tbsp. Oil
  • 1 c. Finely minced unpeeled Jonathan apple, 1/2 lb. Cooking spray
  • 1 1/2 c. Unsweetened apple cider
  • 1/3 c. Firmly packed brown sugar
  • 10 whl cloves
  • 1 x 3 inch stick cinnamon

Directions

  1. Waffles:Combine flour, sugar, baking pwdr, cinnamon, salt and grnd cloves in a bowl.. Beat egg whites ( at room temperature) at high speed of an electric mixer till stiff peaks form. Set aside.
  2. Combine yolks, lowfat milk and oil in a large bowl. Beat at medium speed of an electric mixer till well blended. Add in flour mix, stirring just till moistened. Stir in apple. Gently fold egg whites into flour mix.
  3. Coat waffle iron with cooking spray. Allow waffle iron to preheat. Pour 1/4 c. pf batter per waffle onto warm waffle iron. Bake about 5 min or possibly till steaming stops...
  4. CIDER SYRUP:Combine all ingredients in a small, heavy saucepan. Place over medium heat and cook for 20 min or possibly till reduced to 3/4 c....Throw away cloves and cinnamon stick....Makes 3/4 c...
