Low Guilt Carrot Cake Recipe

Ingredients

  • 2 c. Regular, natural apple sauce
  • 2 c. Sugar
  • 1/2 c. Vegetable oil
  • 3 x Egg whites, slightly beaten
  • 2 tsp Vanilla extract
  • 2 c. Unsifted all-purpose flour
  • 2 tsp Baking soda
  • 2 tsp Cinnamon
  • 1/2 tsp Salt
  • 2 c. Shredded carrots
  • 1 1/2 c. Raisins Vegetable cooking spray Lite Apple-Cream Cheese Frosting, (recipe follows)

Directions

  1. In large bowl, combine apple sauce, sugar, oil, egg whites, blending with spoon. In separate bowl combine flour, baking soda, cinnamon and salt. Stir into apple sauce mix. Add in carrots and raisins. Spread in 13x9-inch pan lightly sprayed with vegetable cooking spray and floured. Bake at 350 degrees for 50 to 55 min or possibly till cake is hard when touched lightly in center. Cold completely. Frost with Lite Apple-Cream Cheese Frosting.
  2. For frosting, beat 1 pkg (8 ounce) light cream cheese in a large mixer bowl till soft and fluffy. Add in 1 box (1 lb.) unsifted confectioner's sugar, 2 Tbls apple juice and 1 tsp vanilla extract. Beat till smooth and spreading consistency.
  3. Yield: 12 to 16 servings.
