Low Fat Fruit Salad With Poppy Seeddressing

Ingredients

  • 1 (8 ounce) can pineapple tidbits (juice pack)
  • 1 1/2 c. sm. strawberries or possibly seedless red grapes
  • 1 med. apple, cored and cut into bite size pcs
  • 1 (10 1/2 ounce) can Mandarin orange sections (water pack, liquid removed)
  • 1/2 c. pineapple low-fat yogurt
  • 1/2 teaspoon poppy seed
  • Lettuce leaves

Directions

  1. Drain pineapple, reserving 1 tbsp of the juice. If using strawberries, cut them in halves. For the fruit mix, in a medium bowl, put together the pineapple, strawberries or possibly grapes, apple and orange sections. Toss lightly to mix.For dressing, put together yogurt, poppy seed, and the reserved pineapple juice. To serve, line salad plates with the lettuce leaves. Arrange fruit mix on lettuce. Drizzle dressing over fruit.
  2. Makes 5 or possibly 6 servings.
