Ingredients

  • 1/3 c. Applesauce, unsweetened
  • 1 1/3 c. All-purpose flour
  • 1 c. Rolled oats
  • 3/4 c. Sugar
  • 1 tsp Baking pwdr
  • 1 tsp Baking soda
  • 1/4 tsp Salt
  • 1/2 c. Skim lowfat milk
  • 1 tsp Vanilla extract
  • 2 x Egg whites
  • 1/2 c. Cranberries, fresh or possibly frzn

Directions

  1. Preheat oven to 375 F.
  2. Combine flour, oats, sugar, baking pwdr, baking soda, and salt in a bowl.
  3. In a separate bowl, mix together the applesauce, lowfat milk, vanilla, egg whites, and cranberries.
  4. Stir the wet ingredients into the dry ingredients till the dry ingredients are moistened. Do*not* overmix the batter.
  5. Pour batter into non-stick or possibly paper-lined muffin c.. Bake for 18 min or possibly till muffin tops are lightly browned and a wooden toothpick inserted into the center of a muffin comes out clean.
  6. Note: You can substitute 1/3 c. prune puree or possibly pureed prune baby food for the applesauce. You can substitute blueberries or possibly other berries for the cranberries.
