Low-Carb Buche de Noel (My Guest Post)

I’ve always wanted to develop a recipe for sugar-free, gluten-free low-carb Buche de Noel (Yule Log), and this year I finally managed to do that! Chocolate cake roll, filled with creamy filling and frosted with decadent chocolate frosting. Mmmm… delicious!

%3C/p%3E%3Cp%3EDecember%2021,%202015%20By%20elviira%202%20Comments%3C/p%3E%3Cp%3EIf%20you%20would%20like%20to%20create%20something%20festive%20for%20the%20holidays,%20be%20sure%20to%20check%20my%20guest%20post%20for%20my%20blogger%20friend%20Lisa%20and%20her%20fantastic%20Low%20Carb%20Yum%20blog.%3C/p%3E%3Cp%3EI%E2%80%99ve%20always%20wanted%20to%20develop%20a%20recipe%20for%20sugar-free,%20gluten-free%20low-carb%20Buche%20de%20Noel%20(Yule%20Log),%20and%20this%20year%20I%20finally%20managed%20to%20do%20that!%20Chocolate%20cake%20roll,%20filled%20with%20creamy%20filling%20and%20frosted%20with%20decadent%20chocolate%20frosting.%20Mmmm%E2%80%A6%20delicious!%3C/p%3E%3Cp%3EI%20finally%20cracked%20the%20code%20to%20a%20low-carb%20cake%20roll%20that%20won%E2%80%99t%20crack!%20Well,%20for%20the%20first%20time%20I%20did%20it%20with%20my%20newsletter%20recipe%20for%20a%20Peanut%20Raspberry%20Cake%20Roll%20more%20or%20less%20by%20accident,%20and%20after%20that%20wanted%20to%20check%20and%20ensure%20that%20the%20method%20really%20works.%20When%20creating%20the%20recipe%20for%20the%20Peanut%20Raspberry%20Cake%20Roll,%20I%20separated%20the%20eggs%20and%20whipped%20the%20egg%20whites%20for%20a%20fluffier%20cake,%20but%20after%20mixing%20the%20yolks%20with%20the%20dry%20ingredients,%20I%20noticed%20that%20the%20mixture%20was%20far%20too%20dry%20and%20crumbly.%20I%20added%20two%20whole%20eggs%20to%20the%20dough,%20folded%20in%20the%20egg%20whites%20and%20that%20seemed%20to%20do%20the%20trick!%20The%20consistency%20was%20just%20right%20and%20the%20cake%20didn%E2%80%99t%20crack%20while%20rolling.%3C/p%3E%3Cp%3EWith%20this%20chocolate%20cake%20for%20the%20Low-Carb%20Buche%20de%20Noel,%20I%20wanted%20to%20use%20coconut%20flour.%20It%20has%20fine%20texture%20and%20it%E2%80%99s%20much%20more%20affordable%20than%20for%20example%20almond%20flour,%20the%20price%20of%20which%20has%20skyrocketed%20during%20this%20year.%3C/p%3E%3Cp%3EAnyway,%20I%20was%20afraid%20that%20I%20wouldn%E2%80%99t%20be%20able%20to%20produce%20flexible%20enough%20cake%20so%20that%20it%20would%20handle%20rolling%20without%20cracking,%20and%20that%E2%80%99s%20why%20I%20added%201%20tablespoon%20psyllium%20husk%20powder%20to%20the%20dough,%20to%20give%20some%20flexibility.%20I%20also%20increased%20the%20amount%20of%20eggs%20and%20added%20some%20fluid,%20since%20psyllium%20and%20coconut%20flour%20are%20both%20absorbing%20substantial%20amount%20of%20fluid.%3C/p%3E%3Cp%3EThe%20result%20was%20a%20fluffy%20cake%20that%20was%20easy%20to%20roll.%20One%20of%20the%20key%20things%20is%20not%20to%20overbake%20the%20cake.%20I%20forgot%20one%20experiment%20in%20the%20oven%20for%2025%20minutes,%20and%20there%20was%20no%20hope%20I%20would%20have%20been%20able%20to%20roll%20it.%20However,%20it%20made%20nice%20pastries%20when%20I%20cut%20the%20cake%20in%20half,%20filled%20one%20half%20with%20whipped%20cream%20and%20a%20touch%20of%20sugar-free%20apricot%20jam%20and%20placed%20the%20second%20half%20on%20top.%20Then%20I%20just%20cut%20the%20whole%20thing%20into%202-inch%20(5%20cm)%20pastries.%20My%20family%20loved%20them!%3C/p%3E%3Cp%3EIf%20you%20have%20any%20questions%20about%20making%20the%20Low-Carb%20Buche%20de%20Noel,%20please%20post%20them%20here%20to%20get%20quick%20reply,%20even%20I%20try%20to%20check%20Lisa%E2%80%99s%20blog%20often.%20In%20any%20case,%20Lisa%20has%20marvelous%20recipes%20on%20her%20blog%20and%20she%20is%20working%20really%20hard%20on%20them%20so%20be%20sure%20to%20try%20them%20out!%20And%20here%20is%20again%20the%20link%20to%20my%20Low-Carb%20Buche%20de%20Noel%20recipe%20on%20Lisa%E2%80%99s%20blog.%3C/p%3E%3Cp%3EHave%20a%20relaxing%20holiday%20time!%3C/p%3E){kind=link}
