Directions

  1. Cook rice according to directions. Heat oil in heavy skillet and add in flour (cook stirring constantly till tan color). This is Rue. Add in onions, celery and pepper; cook till onions are transparent.
  2. In another skillet cook sausage (breaking apart till fine). Add in liver and other ingredients, blend well. Place in flat baking dish and cover and bake 15 min. Add in green onions and parsley, toss and bake another 15 min. (May add in warm sauce if want this hotter.)
