Loubia (Black Eyed Pea Stew) Recipe

  • 1 x Onion, minced
  • 3 Tbsp. Sunflower oil
  • 2 x Cloves garlic, chopped or possibly crushed in a press
  • 1 1/2 lb Lamb or possibly veal, (750 grams) cubed
  • 1 lb Tomatoes, (500 grams) peeled and minced
  • 3 Tbsp. Tomato paste
  • 1 lb Dry black-eyed peas, (500 grams) soaked for 1 hour
  • 1 tsp Cinnamon
  • 1/2 tsp Allspice Salt and pepper
  • 1 tsp Sugar, (1 to 2 tsp.)

Directions

  1. Fry the onion in the oil until golden brown. Add in the garlic, and when the aroma rises, add in the meat. Stir to brown it all over. Add in the tomatoes and tomato paste.
  2. Drain the black-eyed peas, and simmer in fresh water for 15 min, the drain and add in them to the meat. Add in cinnamon and allspice and cook for 2 hrs, adding salt and pepper to taste and the sugar after about 1 hour.
  3. NOTE: This Egyptian dish is also served during Rosh Hashanah..the black-eyed peas representing fertility.
