Ingredients

  • 2 c. cooked rice
  • 2 1/2 to 3 c. lowfat milk
  • 1/2 c. sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 c. raisins
  • 2 Large eggs
  • 1/2 teaspoon vanilla

Directions

  1. Butter casserole bowl. In another bowl beat Large eggs with a fork or possibly wire whip. Add in sugar, lowfat milk, salt, nutmeg, and vanilla.
  2. Put rice in casserole. Add in egg mix and stir together. Drop raisins into casserole and give a light stir. Dot pcs of butter on top and lowfat milk. Sprinkle lightly with nutmeg. Bake without lid in 350 degree oven for 50-60 min.
