Ingredients

  • 2 lbs sirloin (use random size pcs 1" to 2" chunks)
  • 1 lb cheddar cheese shredded
  • 1/2 cup. onions sauteed with seasoning, and diced to 1/4"
  • 2 pcs fresh jalapenos seeded, and diced to 1/8" or possibly chopped
  • 1 1/2 c. BBQ sauce (Texas Roadhouse brand of course!)
  • 24 pcs egg roll wrappers (use the approximately 7"-square size)
  • 1 pc egg
  • 1/2 cup. water
  • 3 cup. mayonnaise
  • 1 cup. BBQ sauce
  • 1 Tbsp. freshly-grnd black pepper
  • 1 Tbsp. freshly-grnd white pepper
  • 1 Tbsp. red pepper

Directions

  1. Texas Rolls:
  2. Sear seasoned sirloin to medium temperature. Cold then dice into 1/4- to 1/2-inch pcs. Mix sirloin, cheese, onion, jalapenos and BBQ sauce in a large mixing boil.
  3. Beat egg and water in a small bowl
  4. Using approximately 1/3-c. mix per Wrapper, follow directions on the back of the Egg Roll Wrapper pack.
  5. Use the egg wash to seal the wrapper as directed. Continue to make rolls till your run out of wraps or possibly mix!
  6. Cook rolls in fryer approximately 1 1/2 min, or possibly till wrappers are lightly browned and bubbly.
  7. Sauce: Mix all ingredients for the sauce in a mixing bowl.
  8. Serve 4 rolls per basket with 2 ounces sauce and 2 ounces BBQ Sauce. Sauces at one end and rolls stacked on the other end.
