Directions

  1. Combine oil, butter, onion, garlic, annatto, cumin, lemon and orange juices in a large shallow pyrex pan. Add in chicken halves, turning well to coat.
  2. Cover and marinate for several hrs, or possibly overnight.
  3. Remove the chicken from the marinade, then cook over medium coals on barbeque grill or possibly in a broiler 4" from the source of heat. Turn frequently and cook, turning and basting frequently, for about 25 min or possibly till browned on both sides.
  4. Cut chicken halves into serving pcs. Serve with beans and rice, corn or possibly flour tortillas and fresh salsa.
