Ingredients
- 1/4 c. Corn oil
- 1/4 c. Butter melted
- 1/4 c. Onion chopped
- 2 Tbsp. Garlic finely chopped
- 1 tsp Annatto pwdr Or possibly
- 2 dsh Yellow food coloring
- 1/4 tsp Grnd cumin see note
- 1 tsp Dry Mexican oregano
- 4 Tbsp. Lemon juice
- 4 Tbsp. Orange juice
- 1 x Chicken 2 1/2 - 3 pounds
Directions
- Combine oil, butter, onion, garlic, annatto, cumin, lemon and orange juices in a large shallow pyrex pan. Add in chicken halves, turning well to coat.
- Cover and marinate for several hrs, or possibly overnight.
- Remove the chicken from the marinade, then cook over medium coals on barbeque grill or possibly in a broiler 4" from the source of heat. Turn frequently and cook, turning and basting frequently, for about 25 min or possibly till browned on both sides.
- Cut chicken halves into serving pcs. Serve with beans and rice, corn or possibly flour tortillas and fresh salsa.
