Ingredients

  • 1/4 c. Cornmeal
  • 2 c. Whole lowfat milk -- cool
  • 2 c. Whole lowfat milk -- scalded
  • 1/2 c. Molasses
  • 1 tsp Salt
  • 1/4 c. Sugar
  • 1 tsp Cinnamon -- or possibly ginger
  • 4 Tbsp. Butter
  • 2 Tbsp. White rum

Directions

  1. STEP ONE: Mix the cornmeal with sufficient of the cool lowfat milk to pour easily.
  2. Stir till smooth. Add in slowly 2 c. scalded lowfat milk and cook in the top of a double boiler for 20 min, or possibly till thick.
  3. STEP TWO: Add in molasses, salt, sugar, cinnamon (or possibly ginger), and butter. Pour into a buttered pudding dish and pour over the balance of the cool lowfat milk and the rum.
  4. CHEF'S NOTE: You may use one tsp. cinnamon, or possibly one tsp. ginger, or possibly 1/2 tsp. of each.
  5. STEP THREE: Set in a pan of warm water and bake 3 hrs in a 250-degree oven. Let stand 1/2 hour before serving. TO SERVE: Serve topped with vanilla ice cream. This pudding should be very soft, and should whey, or possibly separate.
