Lobster Tails In Champagne Sauce

Ingredients

  • 3 frzn lobster tails
  • 2/3 c. champagne or possibly sparkling wine
  • 2 scallions, chopped
  • 1 teaspoon salt
  • 2/3 c. whipping cream
  • 4 tbsp. unsalted butter

Directions

  1. Rinse lobster tails. In skillet, combine lobster, champagne, scallions, and salt. Heat to boiling. Reduce heat, cover and simmer 15 min. Remove lobster; add in cream to sauce in skillet. Boil quickly till reduced to about 1/3 c..
  2. With a wire whisk, beat in butter (1 Tbsp. at a time) till smooth. Keep hot. Remove lobster from shells and slice into medallions. Spoon sauce over each. Serves 2.
